Breakfast Casseroles at the Lodge Part 1

We had an awesome Labor Day weekend!!
My friend Jackie invited our family down to her and her husband's
hunting lodge in middle of nowhere, Oklahoma.
Two other families joined us and we had a great time.
We played lots of games, went kayaking, went on a 
scavenger hunt and cooked a lot of food.

Jackie made two breakfast casseroles that I think are super yummy.


The first is this baked peach french toast.


We start with butter and brown sugar.


It's only gonna melt a little.


Add a little water and it becomes a delicious sweet gooey mess.


Pour the sticky mess into a greased 9x13 pan.
This pan was a bit large but we were using 
the other pan for the other casserole.


Then, Jackie lined it with canned peaches.

Slice up a loaf of french bread.


And lay it on the peaches.


Now it's time to make the egg mixture.
This is 6 beaten eggs.


Add some milk.


This is Jackie holding the next ingredients - 
vanilla and cinnamon.
Isn't she pretty!!


Mix it all up.


And pour on top.


Sprinkle some cinnamon on top.
Then you put this in the fridge over night.
In the morning - just throw it in the oven, go take a shower,
and when you're ready - so is breakfast!!


This is what it looked like after it came out of the oven the 
next morning before we destroyed it.

Peach French Toast
1/4 cup margarine
1 1/4 cup brown sugar
1 tbsp water
1 29 oz can sliced peaches
(Jackie used an extra small can too because
she doesn't think that 1 can is enough)
1 loaf french bread
6 eggs
1 1/2 cup milk
1 tbsp vanilla

Melt margarine and brown sugar.  Stir constantly.  Add water.  
Pour into greased 9x13 baking dish.  Drain peaches and line them in the pan.  Cut bread into 1" slices and line on top of peaches.  Fill all holes with bread.  Mix eggs, milk and vanilla together.  Pour over bread.  
Cover with foil and refrigerate overnight.  Place in oven and then set to 350.  Cook for 40 minutes.  Let sit for 5 minutes.  
You can eat out of the pan like we did, or slide a knife 
around the edges and flip it over on a tray and make it look pretty :)
